Description

Cinnamon French Toast Roll Ups are a fun and delicious twist on classic French toast, featuring a buttery cinnamon-sugar filling rolled inside flattened bread slices, pan-cooked to golden perfection and coated in cinnamon sugar. Perfect for a cozy breakfast or brunch, these bite-sized roll ups are easy to make and sure to please the whole family.


Ingredients

Filling

  • 1/2 stick butter (softened)
  • 1/4 cup light brown sugar
  • 3 tsp cinnamon

Breading & Coating

  • 10-12 slices of toast bread
  • 2 tbsp granulated sugar
  • 1 tsp cinnamon (or up to taste)
  • powdered sugar (optional, for dusting)
  • 2 tbsp butter for cooking (more if necessary)

Egg Mixture

  • 2 eggs
  • 3 tbsp milk


Instructions

  1. Prepare the cinnamon filling: In a small bowl, combine softened butter, light brown sugar, and cinnamon. Beat until the mixture is smooth and creamy, creating a delicious cinnamon filling.
  2. Mix coatings: In another bowl, combine granulated sugar with cinnamon and set aside for rolling later. In a shallow bowl, beat the eggs with milk and set aside for dipping the roll ups.
  3. Prepare the bread slices: Remove the crusts from the bread slices. Using a rolling pin, flatten each slice to approximately 1/8 inch thickness to make them pliable for rolling.
  4. Assemble the rolls: Spread a thick, even layer of the cinnamon butter filling onto each flattened bread slice. Then gently but firmly roll up each slice around the filling to form tight rolls.
  5. Cook the roll ups: Heat a non-stick pan over medium heat and melt about 1 tablespoon of butter. Dip each roll-up into the egg mixture, coating all sides, then place them seam-side down in the pan. Cook 3-4 rolls at a time, browning each side by turning them a quarter turn until all sides are evenly browned and cooked through.
  6. Coat and serve: Once cooked, roll the French toast roll ups in the cinnamon sugar mixture or dust them with powdered sugar for an extra touch of sweetness. Serve warm, with maple syrup on the side if desired.
