Instructions
- Sauté Shallots: Heat a large skillet over medium heat. Add the olive oil and diced shallot, stirring occasionally until fragrant and softened, about 1-2 minutes.
- Toast Couscous and Add Spices: Add the pearl couscous to the skillet, stirring to coat with olive oil, allowing it to slightly brown. Stir in the turmeric until the couscous is fully coated, about 1 minute.
- Add Broth and Simmer: Add the cinnamon stick and vegetable broth, bring to a boil, then reduce heat to a simmer. Cook uncovered for 5-6 minutes, stirring occasionally to prevent sticking.
- Add Raisins and Continue Cooking: When liquid is mostly absorbed but still present (at 5-6 minute mark), stir in the golden raisins. Continue simmering for another 2-3 minutes until couscous is tender.
- Finish and Serve: Remove skillet from heat. Take out cinnamon stick and stir in chopped parsley, mint, and toasted pine nuts. Transfer to a serving dish and enjoy.
