Ingredients

Chicken

  • 2 small chicken breasts

Bread and Garlic Butter

  • 1 Italian style loaf
  • 1 1/2 sticks unsalted butter (divided)
  • 2 tablespoons minced garlic (or garlic paste, divided)
  • 2 tablespoons chopped parsley (divided)
  • 1 teaspoon crushed red pepper flakes

Sauce and Cheese

  • 1/2 cup heavy cream
  • 1/4 cup shredded parmesan cheese
  • 1/2 cup shredded mozzarella cheese


Instructions

  1. Prepare the chicken: Cut the chicken breasts into ½ inch pieces. Place in a bowl, drizzle with 1 tablespoon olive oil, and season with 1 tablespoon poultry seasoning or a blend of salt, pepper, and garlic powder. Heat a pan over medium heat and cook the chicken pieces until golden and cooked through.
  2. Prepare the garlic butter: Slice the Italian loaf lengthwise into two halves. In a small bowl, mix 1 stick of melted butter, 1 tablespoon minced garlic, 1 tablespoon chopped parsley, and 1 teaspoon crushed red pepper flakes until well combined.
  3. Toast the bread: Spread the garlic butter mixture evenly on both halves of the bread. Place in a preheated oven at 350°F and toast for 5-10 minutes, checking after 5 minutes and monitoring until it reaches your preferred level of toastiness.
  4. Make the Alfredo sauce: Using the same pan that cooked the chicken, reduce heat to medium-low. Add 1/2 stick of butter and let melt. Stir in 1 tablespoon minced garlic and cook for 2-3 minutes until fragrant.
