Bread and Garlic Butter
- 1 Italian style loaf
- 1 1/2 sticks unsalted butter (divided)
- 2 tablespoons minced garlic (or garlic paste, divided)
- 2 tablespoons chopped parsley (divided)
- 1 teaspoon crushed red pepper flakes
Sauce and Cheese
- 1/2 cup heavy cream
- 1/4 cup shredded parmesan cheese
- 1/2 cup shredded mozzarella cheese
Instructions
- Prepare the chicken: Cut the chicken breasts into ½ inch pieces. Place in a bowl, drizzle with 1 tablespoon olive oil, and season with 1 tablespoon poultry seasoning or a blend of salt, pepper, and garlic powder. Heat a pan over medium heat and cook the chicken pieces until golden and cooked through.
- Prepare the garlic butter: Slice the Italian loaf lengthwise into two halves. In a small bowl, mix 1 stick of melted butter, 1 tablespoon minced garlic, 1 tablespoon chopped parsley, and 1 teaspoon crushed red pepper flakes until well combined.
- Toast the bread: Spread the garlic butter mixture evenly on both halves of the bread. Place in a preheated oven at 350°F and toast for 5-10 minutes, checking after 5 minutes and monitoring until it reaches your preferred level of toastiness.
- Make the Alfredo sauce: Using the same pan that cooked the chicken, reduce heat to medium-low. Add 1/2 stick of butter and let melt. Stir in 1 tablespoon minced garlic and cook for 2-3 minutes until fragrant.
- Simmer the sauce: Lower heat to low and add 1/2 cup heavy cream, 1/4 cup shredded parmesan cheese, and 1 tablespoon chopped parsley. Stir continuously and let the sauce simmer for 3-5 minutes until it thickens slightly. Remove from heat.
- Assemble the bread: Spread half of the prepared Alfredo sauce on the toasted bread halves. Top evenly with the cooked chicken pieces and shredded mozzarella cheese. Spread the remaining Alfredo sauce on top.
- Bake and serve: Return the assembled bread to the oven at 350°F for another 5 minutes or until the cheese is fully melted. Remove from oven, slice into 2-3 inch pieces, and serve warm.
