Ingredients

Rice

  • 1 can Santa Fe Corn (15 ounce can)
  • 1 can Black Beans (15 ounce can)
  • 1 Avocado, diced
  • Lime slices (for garnish)
  • Fresh Cilantro (for garnish)

Instructions

  1. Prepare the rice: Cook the cilantro lime rice according to the package directions until fluffy and fully cooked.

  6. Garnish and serve: Garnish each bowl with lime slices and freshly chopped cilantro. Serve immediately and enjoy your flavorful taco rice bowl!

Notes

  • You can substitute ground turkey or chicken for a leaner protein option.
  • Use canned beans and corn that are low sodium or rinse them to reduce salt content.
  • For added heat, top with jalapeños or hot sauce.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • To make it vegetarian, replace ground beef with plant-based crumbles or extra beans.
