Ingredients

Sweet Potatoes

  • 2 roasted sweet potatoes (with skin on)
  • Extra virgin olive oil (about 2 tablespoons, divided)

Eggs and Seasonings

  • 4 eggs
  • Kosher salt, to taste
  • Black pepper, to taste

Toppings

  • 2 tablespoons crumbled feta cheese
  • Za’atar, to sprinkle
  • Urfa Biber or Aleppo pepper, to sprinkle
  • 1 tablespoon chopped fresh parsley


Instructions

  1. Prepare the sweet potatoes: Using a small sharp knife, slice each roasted sweet potato in half lengthwise. Be careful to maintain the skin intact as it will serve as the base to hold the egg later.
  2. Sear the sweet potatoes: Heat about 1 tablespoon of extra virgin olive oil in a medium nonstick skillet over medium heat until shimmering. Place the sweet potato halves cut side down in the pan, allowing them to sizzle immediately. Cook for approximately 3 minutes or until warmed through and slightly caramelized.
  3. Create pockets in the sweet potatoes: Transfer the seared sweet potatoes to serving plates, cut side up. Using the tip of your knife, cut a pocket into the flesh of each half by slicing from top to bottom, leaving the skin intact. Season with a pinch of kosher salt and black pepper.
  4. Fry the eggs: In the same skillet, add a bit more olive oil and heat until shimmering. Crack the eggs carefully into the pan and cook until the whites are fully set and edges turn golden, about 3 minutes. Lightly season with salt and pepper.
