Description

These Potato Chive Egg Bites are a delicious Starbucks-inspired breakfast treat featuring creamy cottage cheese and cheddar blended with eggs, combined with sautéed Yukon gold potatoes, onions, spinach, and fresh chives. Baked to perfection, they offer a savory and satisfying way to start your day or enjoy as a snack.


Ingredients

Vegetables and Herbs

  • ½ pound Yukon gold potatoes, diced into small pieces
  • 1 small onion, finely diced
  • ¼ cup chives, finely diced
  • ½ cup finely chopped spinach, tightly packed, chopped

Egg Mixture

  • 6 large eggs
  • 1 cup cottage cheese
  • 1 cup shredded cheddar cheese (divided)

Seasonings and Oil

  • ½ tablespoon olive oil
  • ½ teaspoon fine sea salt
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • Freshly ground black pepper, to taste


Instructions

  1. Preheat Oven and Prepare Molds: Preheat your oven to 350°F. Use silicone molds for best results, or thoroughly grease a 12-cavity muffin tin to prevent sticking.
  2. Sauté Potatoes and Onions: Heat olive oil in a large skillet over medium-high heat. Add diced potatoes and onion, then season with salt, pepper, garlic powder, and paprika. Sauté for about 8 minutes until potatoes are crisp-tender. Remove skillet from heat.
  3. Blend Egg Mixture: In a blender, combine cottage cheese and eggs. Blend until the mixture is creamy and smooth, with no lumps remaining.
  4. Assemble Egg Bites: Evenly divide the cooked potato and onion mixture among the molds or muffin tin cavities. Sprinkle half of the shredded cheddar cheese, then add all the chives and spinach. Pour the blended egg and cottage cheese mixture on top, followed by the remaining shredded cheddar cheese and more chives as a garnish.
  5. Bake and Broil: Bake the egg bites for 18 to 20 minutes. For a browned top, broil them for 1 to 2 minutes, but watch carefully to prevent burning.
