Ingredients
Peach Filling
- 5 peaches, sliced
- 3/4 cup granulated sugar (150 g)
- 1/4 teaspoon salt
Batter
- 6 tablespoons butter (85 g)
- 1 cup all-purpose flour (120 g)
- 1 cup granulated sugar (200 g)
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup milk (180 ml)
Topping
- Ground cinnamon, to taste
Instructions
- Prepare Peach Filling: Add the sliced peaches, 3/4 cup sugar, and 1/4 teaspoon salt to a saucepan and stir to combine. Cook on medium heat for a few minutes until the sugar dissolves and juices are released. Remove from heat and set aside.
- Preheat Oven and Melt Butter: Preheat your oven to 350°F (175°C). Slice the butter into pieces and place in a 9×13 inch baking dish. Put the dish in the oven while it preheats to melt the butter evenly. Once melted, carefully remove the dish from the oven.
- Make the Batter: In a large bowl, mix together the flour, 1 cup sugar, baking powder, and 1/4 teaspoon salt. Stir in the milk just until combined, avoiding overmixing to keep the batter light.
- Assemble Cobbler: Pour the batter over the melted butter in the baking dish, smoothing it into an even layer. Spoon the peach mixture and juices evenly over the batter. Generously sprinkle ground cinnamon on top for added flavor.
- Bake the Cobbler: Place the baking dish in the oven and bake at 350°F for about 38-40 minutes, or until the batter is set and golden brown on top.
- Serve Warm: Remove from the oven and let cool slightly. Serve warm, optionally with a scoop of vanilla ice cream for a classic finish.
Notes
- If using canned peaches, skip simmering the peaches with sugar (steps 1 & 2), and proceed directly to assembling the cobbler.
- Be careful not to overmix the batter to keep the topping tender and fluffy.
- For extra flavor, sprinkle additional cinnamon or nutmeg over the peach layer before baking.
- Storage: Cover and refrigerate leftovers for up to 3 days. Reheat before serving.
