Ingredients

Primary Ingredients

  • 1 tablespoon (17g) white miso
  • 2 ½ tablespoons (37g) unseasoned rice vinegar
  • 3 cloves garlic, grated or finely minced
  • 1-inch piece fresh ginger, peeled and grated or smashed into a paste
  • 1 ½ tablespoons (30g) pure maple syrup or agave nectar
  • 2 teaspoons Dijon mustard
  • 2 teaspoons soy sauce or tamari (for gluten-free option)
  • 2 ½ tablespoons (35g) sunflower oil or a neutral-flavored oil of choice
  • 1 ½ tablespoons (21g) toasted sesame oil


Instructions

  1. Mix Miso and Vinegar: Add the white miso and unseasoned rice vinegar into a jar with a lid or a bowl. Whisk thoroughly until the miso is mostly smooth with no large clumps.
  2. Combine Ingredients in Jar: If using a jar, add grated garlic, grated ginger, maple syrup or agave nectar, Dijon mustard, soy sauce, sunflower oil, and toasted sesame oil. Seal the jar tightly and shake vigorously until the mixture is smooth and has a slightly creamy texture.
  3. Combine Ingredients in Bowl: If using a bowl, whisk together garlic, ginger, maple syrup or agave, mustard, and soy sauce until well combined. Then slowly stream both oils into the mixture while whisking continuously to emulsify the dressing.
  4. Adjust Seasonings: Taste the dressing and adjust the flavors by adding more soy sauce or salt for enhanced savoriness, more maple syrup for sweetness, more mustard for tang, or additional toasted sesame oil for richness according to your preference.
  5. Store Properly: Transfer the dressing to a sealed jar and store it in the refrigerator. It will keep fresh and flavorful for up to 5 days.
