Ingredients
Main Ingredients
- 2 cups long-grain white rice (rinsed and drained)
- 2 tablespoons butter (divided)
- 1 medium onion (diced)
- 3 cloves garlic (minced)
- 1 teaspoon ground cumin
- 1 teaspoon turmeric powder
- Salt and pepper (to taste)
- 2 3/4 cups water
- 1/4 cup roasted pine nuts
- 1/4 cup fresh parsley (chopped)
Instructions
- Rinse the Rice: Start by rinsing the long-grain white rice under cold running water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky during cooking. Drain the rice thoroughly.
- Sauté Aromatics: In a large, heavy-bottomed pot, melt 1 tablespoon of butter over medium heat. Add the diced onion and minced garlic and sauté until the onions become translucent and fragrant, about 3-5 minutes.
- Add Rice and Spices, Boil: Add the rinsed rice, ground cumin, turmeric powder, salt, and pepper to the pot. Pour in 2 3/4 cups of water and bring the mixture to a boil.
- Simmer the Rice: Once boiling, reduce the heat to low, cover the pot with a lid, and let the rice simmer for about 15-20 minutes or until the rice is tender and the liquid has been absorbed.
- Fluff the Rice: Remove the pot from heat and gently fluff the rice with a fork to separate the grains.
- Toast Pine Nuts: In a separate pan, melt the remaining 1 tablespoon of butter. Add the pine nuts and toast them over medium heat until golden brown, taking care not to burn them. Remove from heat once toasted.
- Combine and Garnish: Stir the toasted pine nuts and freshly chopped parsley into the cooked rice evenly. Serve warm.
Notes
- Rinsing the rice is important to achieve fluffy, non-sticky grains.
- Monitor the pine nuts closely while toasting as they can burn quickly.
- You can substitute pine nuts with slivered almonds or chopped walnuts for a different texture.
- Adjust salt and pepper to taste before serving.
- This dish pairs wonderfully with grilled meats, fish, or roasted vegetables.
