- 1 cup dry brown lentils
- 2 cups vegetable broth
Sauce
- 3 tbsp tahini
- 1 tsp garlic chili sauce
- 1 tsp Dijon mustard
- 1/2 tsp garlic powder
- 1/2 tsp adobo seasoning
- Juice of one lemon
- 1/4 cup water
- Salt and pepper to taste
Wraps
- 4 large whole grain wraps
- Desired fresh vegetables for filling (lettuce, tomato, cucumber, or bell peppers recommended)
Instructions
- Prepare Lentils: Rinse and drain the dry brown lentils thoroughly. Place them in a saucepan with 2 cups of vegetable broth and bring to a boil over medium-high heat.
- Simmer Lentils: Once boiling, reduce heat to low and cover the pan. Let the lentils cook for about 20 minutes or until they are tender and fully cooked. After cooking, discard any excess liquid that the lentils have not absorbed. Cover and let cool.
- Make Sauce: In a bowl, whisk together tahini, garlic chili sauce, Dijon mustard, garlic powder, adobo seasoning, lemon juice, and 1/4 cup of water until smooth. Season with salt and pepper to taste.
- Combine Lentils and Sauce: Remove the lid from the cooked lentils and pour the prepared sauce over them. Stir well to ensure the lentils are evenly coated in the flavorful sauce.
- Assemble Wraps: Lay out a whole grain wrap and add a generous portion of the lentil mixture along with your choice of fresh veggies. Roll the wrap like a burrito to enclose the filling. Serve immediately or refrigerate extra lentils to assemble more wraps later in the week.
