Description

A refreshing and simple Fruit and Yogurt Parfait recipe featuring layered strawberries, blueberries, creamy Greek yogurt, and crunchy granola. Perfect as a healthy breakfast or snack, it combines sweetened fresh fruit with creamy yogurt and a satisfying granola crunch.

Ingredients

Fruit Layer

  • 1 cup strawberries, sliced
  • ¼ cup granulated sugar
  • ½ cup blueberries

Other Ingredients

  • 1 cup full fat Greek yogurt
  • ½ cup granola

Instructions

  1. Prepare Strawberries: In a medium bowl, combine the sliced strawberries and granulated sugar. Stir well to coat the strawberries evenly. Cover the bowl and refrigerate for at least 30 minutes or up to overnight to allow the strawberries to macerate and become sweet and juicy.
  2. Start Parfait Assembly: Divide half of the macerated strawberries evenly into two clear serving glasses. This forms the first fruit layer.
  3. Add Yogurt Layer: Spoon half of the full-fat Greek yogurt evenly over the strawberries in each glass.
  4. Add Blueberries: Sprinkle half of the fresh blueberries over the yogurt layer to add freshness and color.
  5. Add Granola: Evenly distribute all of the granola on top of the blueberries in each glass, adding a satisfying crunch to the parfait.
  6. Repeat Layers: Create one more layer by adding the remaining strawberries, followed by the remaining Greek yogurt, and finally the remaining blueberries on top to complete the parfait layers.
  7. Serve: Serve the parfaits immediately to enjoy the best texture and crunch from the granola. If left for too long, the granola may soften.

Notes

  • You can prepare the macerated strawberries up to a day in advance to save time.
  • Use low-fat or non-fat Greek yogurt for a lighter version.
  • Substitute granola with nuts or seeds for a different crunch.
  • Adjust sweetness by reducing or omitting sugar according to taste and dietary preferences.
  • To keep granola crunchy longer, add it just before serving.
