Instructions

  1. Prepare the chicken filling: Preheat your oven to 350ºF. In a large bowl, combine the shredded chicken, ¼ cup of enchilada sauce, and a generous pinch of salt and black pepper. Mix everything thoroughly and taste to adjust seasoning with more salt and pepper if needed.
  2. Warm the tortillas: For corn tortillas, wrap them in a damp paper towel and microwave for 1 minute, flipping halfway through to ensure they become warm and pliable. For flour tortillas, microwave them on a plate for 1 minute, flipping halfway through until they are warm and flexible.
  3. Assemble the enchiladas: Fill each tortilla evenly with the chicken mixture and about 1 cup of shredded cheese. Roll each tortilla tightly to enclose the filling and place them seam side down in a large baking dish.
  4. Bake the enchiladas: Pour the remaining 1 ¾ cups of enchilada sauce evenly over the rolled tortillas, then sprinkle the remaining 1 ½ cups of shredded cheese on top. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  5. Serve and garnish: Remove from the oven and serve immediately. Add optional toppings like diced onions, chopped cilantro, sour cream, shredded lettuce, and cotija cheese to enhance the flavor and texture.
