  1. Preheat the oven: Set your oven to 400 degrees Fahrenheit (200 degrees Celsius) and prepare a baking sheet by lining it with parchment paper or lightly greasing it to prevent sticking.
  2. Prepare chickpeas: Drain the chickpeas from the can and rinse them thoroughly under cold water. Lay them out on a clean kitchen towel and dry them completely, as removing moisture is crucial to achieving crispy chickpeas. While drying, gently rub to remove and discard any loose chickpea skins, though it’s not necessary to remove every single one.
  3. Toss with oil and seasoning: Spread the dried chickpeas on the baking sheet. Drizzle the olive oil over them and toss well to ensure they are evenly coated. Sprinkle the black pepper and fine sea salt, then toss again to distribute the seasoning evenly.
  4. Roast to crisp perfection: Place the baking sheet in the preheated oven and roast the chickpeas for 25 to 35 minutes. Every 10 minutes, remove the pan and toss the chickpeas to promote even roasting. The exact roasting time depends on how crispy you prefer them. After removing from the oven, let the chickpeas cool for a few minutes; they will crisp up further as they cool.
