Description

Delicious and healthy Chocolate Nut & Date Bars combining crunchy nuts, sweet dates, and rich milk chocolate to create a perfect snack or dessert that is easy to prepare and no-bake.


Ingredients

Bars

  • 1 cup unsalted nuts (any mix of almonds, walnuts, and/or cashews)
  • 1 cup pitted dates
  • Salt, to taste

Chocolate Topping

  • 1 cup milk chocolate (chopped chocolate bar or chocolate chips)
  • 1 teaspoon coconut oil


Instructions

  1. Prepare Pan: Line an 8×4 loaf pan with parchment paper to prevent sticking and ease removal of the bars.
  2. Process Nuts and Dates: In a food processor, combine the nuts, pitted dates, and a pinch of salt. Grind until the mixture forms small pieces and sticks together when pressed, which may take a few minutes.
  3. Shape the Bars: Transfer the nut and date mixture into the lined loaf pan. Use your hands to press down firmly and flatten the mixture evenly. Place the pan in the freezer for 10 minutes to help harden the mixture.
  4. Melt Chocolate: In a microwave-safe bowl, combine the milk chocolate and coconut oil. Microwave for 2 minutes, stirring halfway through to ensure the chocolate melts evenly without burning.
  5. Assemble: Remove the loaf pan from the freezer and pour the melted chocolate over the nut and date layer. Use the back of a spoon or spatula to spread the chocolate evenly across the surface. Return the pan to the freezer and chill for 1 hour until fully set.
  6. Serve: Once firm, remove the bars from the pan using the parchment paper. Cut into 8 slices. Optionally, sprinkle flaky salt on top for added flavor and texture.

  • You can substitute dark or semi-sweet chocolate for a different flavor profile.
