Description

Ingredients

Chicken

  • 2 tbsp Avocado Oil (divided)
  • 8 oz Chicken Breasts or Chicken Thighs (boneless, trimmed of excess fat)
  • Salt & Pepper (to taste)
  • 1/2 tsp Garlic Powder
  • 1 tsp Italian Seasoning

Vegetables

  • 1/2 medium Red Bell Pepper
  • 1/2 medium Green Bell Pepper
  • 1/2 large Onion

Cheese & Bread

  • 4 slices Provolone Cheese
  • 2 Sausage Rolls


Instructions

  1. Season the chicken: Season the chicken all over with salt, pepper, and 1/4 tsp garlic powder. Let it rest at room temperature while preparing other ingredients.
  2. Prepare the vegetables: Thinly slice the bell peppers and onions and set aside.
  3. Cook the chicken: Heat 1 tablespoon of avocado oil in a large skillet over medium heat. Cook the chicken for 3-4 minutes per side until cooked through. Transfer to a cutting board and tent with foil.
  4. Sauté the vegetables: Add the remaining oil to the skillet. Add the bell peppers, onions, remaining garlic powder, Italian seasoning, and a pinch each of salt and pepper. Increase heat to medium-high.
  5. Cook until tender: Cook the vegetables until tender and slightly charred, about 6-8 minutes. Reduce the heat to medium.
  6. Slice the chicken: Thinly slice the cooked chicken into strips.
  7. Combine chicken and vegetables: Stir the sliced chicken into the pan with the sautéed vegetables. Divide the mixture into two piles shaped to fit the sandwich rolls. Cover each pile with slices of provolone cheese and let it melt.
  8. Warm the sausage rolls: Heat the sausage rolls in the microwave for about 20 seconds until warm.
  9. Assemble the sandwich: Scoop one pile of chicken and vegetables with melted cheese into a warm sausage roll. Repeat for the second roll. Serve hot.
