Ingredients
Chicken and Seasoning
- 1 pound chicken breast or thighs, cut into bite-sized pieces
- 2 tablespoons taco seasoning
- 1 tablespoon olive oil
- Salt & pepper, to taste
Tacos
- Flour tortillas
- Shredded Mexican cheese blend
- Pico de gallo, for topping
Instructions
- Season the Chicken: In a bowl, combine the bite-sized chicken pieces with taco seasoning, olive oil, salt, and pepper. Mix thoroughly until the chicken is evenly coated with the seasoning mixture.
- Cook the Chicken: Preheat your air fryer to 375°F (190°C). Place the seasoned chicken pieces in the air fryer basket and cook for 12 to 15 minutes until they are golden brown and fully cooked through. Remember to shake the basket halfway through cooking to ensure even cooking.
- Assemble the Tacos: Lay out the flour tortillas and sprinkle a generous layer of shredded Mexican cheese over half of each tortilla. Add a portion of the cooked chicken on top of the cheese, then fold the tortilla in half to enclose the filling.
- Bake the Tacos: Preheat your oven to 400°F (200°C). Place the folded tacos on a baking sheet. Bake them for 12 to 15 minutes until the tortillas are crispy and the cheese inside is melted and bubbly.
- Serve: Remove the tacos from the oven and top with fresh pico de gallo. Serve warm for the best flavor and enjoyment.
Notes
- Using chicken thighs will result in juicier tacos compared to chicken breast.
- If you prefer, you can cook the chicken entirely in the oven by baking at 375°F (190°C) for 20–25 minutes instead of air frying.
- For a gluten-free option, substitute the flour tortillas with corn tortillas.
- Add a squeeze of lime or a drizzle of sour cream for additional flavor.
- Adjust the level of seasoning according to your preference.
