Description

A soothing and aromatic Chai Spiced Coconut Milk beverage that combines rich coconut milk with warming spices like ginger, cinnamon, cardamom, and star anise. Sweetened naturally with Medjool dates, this creamy drink is perfect for cozy mornings or relaxing evenings.

Ingredients

Liquids

  • 13.5 oz coconut milk
  • 1 cup water

Spices & Flavorings

  • 1-2 inch piece fresh ginger, peeled and roughly chopped (adjust to taste)
  • 1 star anise
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla bean paste
  • 1-2 pinches cardamom
  • 1 pinch cloves

Sweetener

  • 4 Medjool dates, pitted

Garnish

  • Extra whole star anise for garnish

Instructions

  1. Combine Ingredients and Simmer: Add the coconut milk, water, fresh ginger, pitted Medjool dates, one star anise, cinnamon, vanilla bean paste, cardamom, and cloves into a pot on medium heat. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer gently for 5 to 10 minutes to allow the flavors to infuse deeply.
  2. Remove Star Anise and Blend: Use a spoon to carefully remove the whole star anise from the pot. Then pour the simmered mixture into a high-powered blender. Blend on high for about one minute or until the mixture is smooth and creamy without any chunks.
  3. Serve and Garnish: Pour the blended chai spiced coconut milk into mugs. Garnish each serving with an extra whole star anise for a decorative touch and added aroma. Serve warm and enjoy the comforting spice notes.

Notes

  • Adjust the amount of fresh ginger and cardamom based on your preferred spice level.
  • Medjool dates provide natural sweetness; substitute with another sweetener if desired.
  • Use canned full-fat coconut milk for a richer texture.
  • Blending the mixture ensures a smooth, creamy drink without gritty spices.
  • Serve immediately after preparing for best taste; refrigerate leftovers and reheat gently.
