Instructions

  1. Grease the baking dish: Preheat your oven to 375°F (190°C) and generously grease a 9-inch square baking dish to prevent sticking.
  2. Mix dry ingredients: In a large bowl, combine the rolled oats, half of the sliced almonds (½ cup), ground cinnamon, baking soda, and kosher salt. Stir until evenly blended.
  3. Whisk wet ingredients: In a separate medium bowl, whisk together the milk, honey or maple syrup, eggs, melted butter or coconut oil, and vanilla bean paste until smooth and fully combined.
  4. Combine mixtures and add berries: Pour the wet ingredient mixture into the bowl with the dry ingredients. Gently fold in the frozen mixed berries to distribute them evenly without breaking them up.
  5. Transfer and top: Pour the combined mixture into the prepared baking dish. For extra texture and flavor, sprinkle the remaining ¼ cup of sliced almonds and a few extra frozen berries on top.
