Description

This Banana Bread Cobbler is a comforting dessert combining the rich flavors of ripe bananas with a sweet, crumbly streusel topping loaded with oats and pecans. Baked to golden perfection, it’s served warm with a scoop of creamy vanilla ice cream for a delightful treat that blends the best of banana bread and fruit cobbler.

Ingredients

Streusel Topping:

  • 3/4 cup packed light brown sugar
  • 1/2 cup self-rising flour
  • 1/2 cup butter, softened
  • 1 cup old-fashioned oats
  • 1/2 cup chopped pecans

Cobbler:

  • 1 cup self-rising flour
  • 1 cup sugar
  • 1 cup milk
  • 1/2 cup butter, melted
  • 4 medium-size ripe bananas, sliced
  • Vanilla ice cream (for serving)

Instructions

  1. Prepare Streusel: Preheat your oven to 375°F (190°C). In a medium bowl, use a fork to stir together the light brown sugar, self-rising flour, and softened butter until the mixture becomes crumbly. Then, fold in the old-fashioned oats and chopped pecans. Set this streusel topping aside for later.
  2. Make Cobbler Batter: In another bowl, whisk together the self-rising flour, sugar, and milk just until blended. Next, whisk in the melted butter until smooth. Pour this batter evenly into a lightly greased 11- x 7-inch baking dish. Arrange the banana slices evenly over the batter, then sprinkle the prepared streusel topping across the bananas.
  3. Bake the Cobbler: Place the baking dish in the preheated oven and bake for 40 to 45 minutes. The cobbler is done when the streusel is golden brown and the batter underneath is bubbly. Remove from oven and let it cool slightly. Serve warm with scoops of vanilla ice cream for a luscious finishing touch.

Notes

  • Use ripe bananas for maximum sweetness and flavor.
  • Self-rising flour contains baking powder and salt, so no need to add extra leavening agents.
  • For a nut-free version, omit the pecans or substitute with sunflower seeds.
  • Old-fashioned oats provide a pleasant texture; quick oats can be used in a pinch but will alter the topping’s texture.
  • Leftovers should be stored covered in the refrigerator and are best enjoyed within 3 days.
