Description

Smooth, tangy whipped feta topped with sweet, caramelized roasted strawberries—this elegant dip is an irresistible blend of creamy, savory, and fruity flavors.


Ingredients

8 oz feta cheese, crumbled

4 oz cream cheese, softened

1 tablespoon olive oil

1 teaspoon honey

1 teaspoon lemon zest

1 pint fresh strawberries, hulled and halved

1 tablespoon olive oil (for roasting)

1 tablespoon balsamic vinegar

1 tablespoon brown sugar

Optional garnish: fresh mint or basil leaves, cracked black pepper, extra drizzle of honey


Instructions

  1. Preheat oven to 400°F (200°C). Toss halved strawberries with olive oil, balsamic vinegar, and brown sugar on a baking sheet. Roast for 12–15 minutes until soft and syrupy. Let cool slightly.
  2. In a food processor, blend feta, cream cheese, olive oil, honey, and lemon zest until very smooth, scraping down sides as needed.
  3. Spread whipped feta in a shallow bowl or platter. Top with roasted strawberries and their juices.
  4. Garnish with fresh herbs, cracked black pepper, and a drizzle of honey if desired. Serve with crostini, crackers, or fresh bread.

Notes

For a spicy twist, add red pepper flakes to strawberries before roasting.

Top with toasted pine nuts or pistachios for crunch.

Swap lemon zest for orange for a citrus variation.

Mix in goat cheese with the feta for extra tang.

Use raspberries, blueberries, or cherries instead of strawberries.
