Ingredients

For the Patties

  • 1 lb ground turkey
  • 2 green onions, finely diced
  • 1/4 cup Panko breadcrumbs
  • 2 tbsp natural peanut butter
  • 2 tsp Thai red curry paste
  • 2 cloves garlic, minced
  • 1 tsp fresh lime juice
  • 1 tsp fresh lime zest
  • 1 tbsp finely grated ginger
  • 2 tbsp sesame oil

For the Sauce and Toppings

  • 1/4 cup mayonnaise
  • 3 tbsp Thai sweet chilli sauce
  • 4 large burger buns
  • 1/2 cup shredded green cabbage
  • 1/2 large carrot, shredded
  • 1/4 cup salted, roasted peanuts


Instructions

  1. Mix the Patty Ingredients: In a large mixing bowl, thoroughly combine the ground turkey with diced green onions, Panko breadcrumbs, natural peanut butter, Thai red curry paste, minced garlic, fresh lime juice and zest, and grated ginger. Stir until all ingredients are well incorporated and the mixture is uniform.
  2. Form Patties: Line a baking sheet with parchment paper. Divide the turkey mixture into four roughly equal portions. Shape each portion into a ball, then gently flatten with your hands into a patty shape. Arrange the patties evenly spaced on the prepared baking sheet.
  3. Heat the Pan: Place a large frying pan on the stovetop over medium heat. Add the sesame oil and heat it for 1-2 minutes or until it shimmers, indicating it is hot and ready for frying.
  4. Cook the Patties: Add the patties to the pan without crowding them. If your pan is small, cook in batches to avoid steaming. Fry each patty for 4-5 minutes on one side until it is crispy and browned. Carefully flip each patty and cook for another 4-5 minutes, or until the internal temperature reaches 160°F (71°C) to ensure they are fully cooked.
  5. Prepare the Sauce and Buns: While patties are cooking, combine mayonnaise and Thai sweet chili sauce in a small bowl. Generously spread this sauce on all sides of each burger bun. On the bottom half of each bun, layer shredded green cabbage, shredded carrot, and about a tablespoon of salted roasted peanuts for added crunch and flavor.
