Description

Taco Lasagna is a cheesy, oven-baked casserole that layers all your favorite taco ingredients—seasoned beef, refried beans, salsa, black beans, tortillas, and melted Colby Jack cheese—into one hearty and comforting dish.


Ingredients

  • pounds lean ground beef
  • 1 cup green bell pepper, diced
  • 1 cup onion, diced
  • ¼ cup taco seasoning
  • 2/3 cup water
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1/8 cup chopped cilantro
  • 1½ cups thick salsa
  • 9 taco-size tortillas
  • 1 (14.5 ounce) can refried beans
  • 3 cups shredded Colby Jack cheese

Instructions

  1. Preheat oven to 350°F and spray a 9×13 baking dish with non-stick cooking spray.
  2. In a large skillet over medium-high heat, cook the ground beef with diced green peppers and onions until browned. Drain excess fat.
  3. Add taco seasoning and water to the skillet and simmer for 1–2 minutes on low heat.
  4. Stir in the salsa, black beans, and chopped cilantro. Remove from heat.
  5. Place two tortillas in the bottom of the prepared baking dish. Cut a third tortilla in half to fill in gaps, fully covering the bottom.
  6. Spread 1/3 of the refried beans over the tortillas.
  7. Top with 1/3 of the meat mixture and a thin layer of shredded cheese.
  8. Repeat the layering process two more times: tortillas, beans, meat mixture, cheese.
  9. End with a final layer of tortillas topped with the remaining shredded cheese.
  10. Cover with aluminum foil and bake for 30 minutes, removing the foil during the last 5 minutes to brown the cheese.
  11. Serve with your favorite taco toppings like tomatoes, olives, jalapeños, avocados, or sour cream.

Notes

  • Microwave the refried beans slightly for easier spreading.
  • Use flour or corn tortillas based on preference.
  • This dish can be made a day ahead and baked when ready to serve.
  • Top with fresh toppings after baking for added flavor and texture.
