Ingredients
- 1 lb cherry tomatoes, halved or quartered
- 3 ears corn, cooked and kernels removed
- 2 avocados, peeled, pitted, and sliced
- 1/2 medium red onion, thinly sliced
- 1/4 cup cilantro, chopped
- 2 tablespoons extra virgin olive oil
- 2–3 tablespoons lime juice (from 1–2 limes)
- 2 garlic cloves, minced or pressed
- 1 teaspoon sea salt (or 3/4 teaspoon table salt)
- 1/8 teaspoon black pepper
Instructions
- In a large salad bowl, combine cherry tomatoes, corn, avocado, red onion, cilantro, and garlic.
