Description

This fresh and vibrant Strawberry Spinach Salad is a perfect spring or summer side dish. It’s loaded with sweet strawberries, crisp spinach, toasted pecans, tangy red onion, and creamy feta, all tossed in a bright and zesty poppy seed dressing.


Ingredients

  • 5 ounces fresh spinach
  • 1 cup thinly sliced strawberries
  • ⅓ cup thinly sliced red onion
  • ½ cup toasted pecans
  • 2 ounces feta cheese, crumbled
  • 1 recipe Poppy Seed Dressing
  • Sea salt and freshly ground black pepper, to taste

Instructions

  1. In a large bowl, combine the spinach, sliced strawberries, and red onion.
  2. Add a portion of the poppy seed dressing and toss to combine.
  3. Gently add the toasted pecans and crumbled feta cheese. Toss lightly.
  4. Add more dressing as desired and season with sea salt and freshly ground black pepper to taste.
  5. Serve immediately for best texture and flavor.

Notes

  • To make ahead, prepare all ingredients and store separately. Toss with dressing just before serving.
  • Use baby spinach for a more tender texture.
  • Goat cheese can be substituted for feta if preferred.
  • Candied pecans can add a sweet crunch.
