Description
These Strawberry Pineapple Popsicles are a fruity, refreshing, and healthy frozen treat made with just strawberries, pineapple, lemon juice, and a touch of sugar. Perfect for hot summer days or as a light snack for the whole family!
Ingredients
- 1 lb strawberries, stems removed
- 2 cups pineapple chunks
- 1/2 cup fresh-squeezed lemon juice
- 1/4 cup sugar
Instructions
- In a food processor or blender, combine strawberries, pineapple chunks, lemon juice, and sugar. Blend until smooth and no longer chunky.
- Place popsicle molds or 12 (3 oz) paper cups on a baking sheet that will fit in the freezer.
- Pour the fruit mixture into the molds or cups. Insert popsicle sticks into the center of each.
- Carefully transfer the baking sheet to the freezer and freeze for at least 3–4 hours, or until the popsicles are completely solid.
- To serve, remove from freezer and let sit at room temperature for 1 minute before gently pulling the popsicle out of the mold or cup. Enjoy!
Notes
- For a naturally sweeter popsicle, omit sugar if using very ripe fruit.
- Replace sugar with honey, agave, or a sugar substitute for a different sweetener option.
- Silicone popsicle molds make removing the popsicles easier.
- Try layering strawberry puree and pineapple puree separately for a colorful striped look.
