Description

These Strawberry Pineapple Popsicles are a fruity, refreshing, and healthy frozen treat made with just strawberries, pineapple, lemon juice, and a touch of sugar. Perfect for hot summer days or as a light snack for the whole family!


Ingredients

  • 1 lb strawberries, stems removed
  • 2 cups pineapple chunks
  • 1/2 cup fresh-squeezed lemon juice
  • 1/4 cup sugar

Instructions

  1. In a food processor or blender, combine strawberries, pineapple chunks, lemon juice, and sugar. Blend until smooth and no longer chunky.
  2. Place popsicle molds or 12 (3 oz) paper cups on a baking sheet that will fit in the freezer.
  3. Pour the fruit mixture into the molds or cups. Insert popsicle sticks into the center of each.
  4. Carefully transfer the baking sheet to the freezer and freeze for at least 3–4 hours, or until the popsicles are completely solid.
  5. To serve, remove from freezer and let sit at room temperature for 1 minute before gently pulling the popsicle out of the mold or cup. Enjoy!

Notes

  • For a naturally sweeter popsicle, omit sugar if using very ripe fruit.
  • Replace sugar with honey, agave, or a sugar substitute for a different sweetener option.
  • Silicone popsicle molds make removing the popsicles easier.
  • Try layering strawberry puree and pineapple puree separately for a colorful striped look.
