Description

These Spinach Pinwheels are delicious, flaky, and packed with a savory blend of cream cheese, caramelized onions, spinach, and melted cheese all rolled inside crispy puff pastry. Perfect as a party appetizer or snack, they offer a comforting combination of flavors and textures with minimal prep and quick baking time.

Ingredients

For the Filling

  • 2 tbsp salted butter
  • 1 sweet onion, diced
  • 1/2 tsp salt
  • 8 oz cream cheese, softened
  • 8 oz frozen spinach
  • 1 tsp garlic powder
  • 1 cup shredded cheese (mozzarella, Colby jack, or cheddar)

For the Pastry

  • 2 sheets puff pastry
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F to ensure it’s hot enough for a crispy, golden puff pastry finish.
  2. Caramelize Onions: Melt the butter in a skillet over medium heat. Add the diced sweet onions and cook until they soften and become golden brown, which typically takes a few minutes. Set the caramelized onions aside.
  3. Prepare Spinach: Thaw the frozen spinach by submerging it in warm water until fully defrosted. Drain the water thoroughly and use paper towels to pat the spinach dry, removing as much moisture as possible to prevent soggy pinwheels.
  4. Mix Filling: In a large bowl, combine the softened cream cheese, drained spinach, caramelized onions, garlic powder, and salt. Mix until well blended.
  5. Assemble First Sheet: Roll out one sheet of puff pastry on a clean surface. Spread half of the cream cheese and spinach mixture evenly over the entire sheet, making sure to cover all edges, especially the top edge.
  6. Add Cheese: Sprinkle half the shredded cheese evenly over the spread mixture on the puff pastry.
  7. Roll the Pastry: Starting from the bottom edge, carefully roll the puff pastry sheet into a tight tube. Once rolled, press along the seams to seal the tube securely.
  8. Slice into Pinwheels: Using a serrated knife, slice the rolled pastry into 12 equal pinwheel pieces.
  9. Prepare Baking Sheet: Line a baking sheet with parchment paper or grease it lightly. Place the pinwheels at least 2 inches apart to allow space for expansion during baking. Brush the tops with the beaten egg to achieve a golden glaze.
  10. Repeat for Second Sheet: Repeat steps 5 through 9 with the remaining puff pastry sheet and filling ingredients.
  11. Bake: Bake the pinwheels in the preheated oven for 15 minutes. If necessary, bake in two batches to avoid overcrowding, which can cause uneven cooking.
  12. Cool and Serve: Once baked, remove the pinwheels from the oven and allow them to cool for a few minutes. Serve warm and enjoy these flaky, flavorful treats.

Notes

  • Ensure spinach is thoroughly drained and patted dry to avoid sogginess in the pinwheels.
  • Caramelizing the onions slowly will enhance their sweetness and depth of flavor.
  • You can substitute the shredded cheese with your favorite mild to sharp cheeses for different flavor profiles.
  • For crispier pinwheels, avoid overlapping them on the baking sheet and ensure even spacing.
  • Leftover pinwheels can be stored in an airtight container and reheated in the oven to maintain their crispiness.
