Description

This Southwest Chicken Wrap recipe combines crispy chicken tenders with fresh vegetables, black beans, and a zesty homemade southwest dressing wrapped in soft flour tortillas. Ready in just 25 minutes, it’s a perfect flavorful and satisfying meal for lunch or dinner.


Ingredients

Protein and Wraps

  • 6-7 crispy chicken tenders, cooked according to package directions
  • 6 flour tortillas

Vegetables and Beans

  • 6 romaine lettuce leaves
  • 2 medium tomatoes, cut into slices
  • 1 package frozen corn, thawed
  • 1 can black beans, drained and rinsed

Dressing and Seasoning

  • 1 tablespoon oil
  • 1 cup shredded cheddar cheese
  • 1 1/2 cups mayonnaise
  • 1/2 cup salsa
  • 1/2 cup milk
  • 3 tablespoons taco seasoning
  • 1 tablespoon cumin


Instructions

  1. Preheat oven: Preheat your oven according to the instructions on the chicken tenders’ package to prepare for baking.
  2. Bake chicken tenders: Place chicken tenders on a baking sheet and bake them as directed on the package until crispy and fully cooked.
  3. Prepare southwest dressing: In a small mixing bowl, combine mayonnaise, milk, salsa, taco seasoning, and cumin. Mix thoroughly until smooth and set the dressing aside.
  4. Cook corn: Heat oil in a small skillet over medium heat. Add the thawed corn and cook, stirring occasionally, until the corn develops a brown, slightly charred color. Remove from heat and set aside.
  5. Slice chicken: Remove the baked chicken tenders from the oven and cut them into small strips suitable for wrapping.
  6. Assemble wraps: Lay a flour tortilla flat and spread a couple of tablespoons of the southwest dressing on the lower half. Layer with romaine lettuce leaves, slices of tomato, black beans, cooked corn, chicken strips, and sprinkle shredded cheddar cheese on top. Drizzle additional southwest dressing over the fillings.
  7. Roll and serve: Roll the tortilla tightly around the fillings. Cut the wrap in half diagonally and serve immediately with extra southwest dressing on the side for dipping. Enjoy!
