A cozy, creamy Crock Pot casserole made with tender chicken, savory stuffing, and veggies — the ultimate easy comfort food for busy weeknights.
Ingredients
- 2 pounds boneless, skinless chicken breasts
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 cup chicken broth
- 2 cups green beans (fresh or frozen)
- 2 (10.5 oz) cans cream of chicken soup
- 1 (6 oz) box stovetop stuffing mix
- 6 tablespoons butter, melted
Instructions
- Layer Chicken: Place chicken breasts in the bottom of your slow cooker.
- Season: Add minced garlic and Italian seasoning. Pour in the chicken broth.
- Add Veggies: Layer green beans over the chicken.
- Spread Soup: Evenly spread cream of chicken soup over the beans and chicken.
- Top with Stuffing: Sprinkle stuffing mix evenly over the soup layer.
- Add Butter: Drizzle the melted butter over the stuffing.
- Cook: Cover and cook on LOW for 5–6 hours or HIGH for 2–3 hours, until chicken is tender and fully cooked.
Notes
- Swap proteins: Boneless chicken thighs or tenders also work great.
- Use different veggies: Try frozen mixed vegetables or broccoli instead of green beans.
- Cream soup variations: Swap in cream of mushroom or cream of celery for a flavor twist.
- Storage: Leftovers can be refrigerated for up to 3–4 days. Reheat gently in the microwave or oven.
