- 2 tbsp unsalted butter
- 1 large yellow onion, thinly sliced
- 1/3 cup Guinness beer
Instructions
- Preheat and prepare cabbage: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. Slice about 1 inch off the top of the cabbage, then cut the cabbage into 4 to 5 thick steaks, about half an inch thick each. Place the cabbage steaks on the baking sheet and drizzle with 3 tablespoons of olive oil. Season with kosher salt and pepper. Roast in the oven for approximately 20 minutes until tender and slightly browned.
- Make Guinness caramelized onions: While the cabbage roasts, melt 2 tablespoons of unsalted butter in a skillet over medium heat. Add the thinly sliced yellow onions along with a pinch of kosher salt and pepper. Cook the onions for about 10 minutes, stirring occasionally until softened. Pour in 1/3 cup of Guinness and continue to cook for another 10 minutes, stirring frequently, until the onions are deeply caramelized. Remove from heat and set aside.
- Prepare burger patties: In a large mixing bowl, combine the ground beef with 1 tablespoon olive oil, kosher salt, and pepper. Mix gently to combine without overworking the meat. Shape the mixture into 4 evenly sized burger patties.
- Top cabbage and roast with burgers: Remove the baking sheet from the oven once the cabbage steaks are roasted. Place one burger patty directly on top of each cabbage steak. Gently press the patties down to create a smash burger effect. Return the baking sheet to the oven and cook for about 8 minutes.
- Add cheese and finish cooking: Take the baking sheet out again and top each burger patty with a slice of American cheddar cheese. Return the sheet to the oven and cook just long enough to melt the cheese, about 2 to 3 minutes.
- Serve and garnish: Transfer the cabbage burgers to a serving platter. Top each with a generous spoonful of the Guinness caramelized onions and add ketchup and pickles to taste. Serve immediately and enjoy a flavorful, low-carb twist on classic burgers.
