- 1 cup almond flour
- 2/3 cup cane sugar or granulated sugar
- 1/3 cup cocoa powder or cacao powder
- 1/4 tsp fine sea salt
- 1/2 cup semi-sweet or dark chocolate chips/chunks (reserve 2 tbsp for topping)

- 1/4 cup good quality extra virgin olive oil
- 2 large eggs, at room temperature
- 1 tsp vanilla paste

Instructions
- Preheat and prepare baking dish. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper to prevent sticking and ensure easy removal.
- Bring eggs to room temperature. Place the eggs in a small bowl of very warm water for a few minutes to bring them to room temperature; this helps the batter mix more smoothly.
- Mix dry ingredients. In a medium or large mixing bowl, whisk together the almond flour, sugar, cocoa powder, and fine sea salt until well combined.
- Add wet ingredients and combine. Pour in the olive oil, add the room temperature eggs and vanilla paste, then whisk the mixture thoroughly until the batter is glossy and smooth.
- Fold in chocolate chips. Gently mix in the chocolate chips, reserving 2 tablespoons to sprinkle on top before baking.
- Pour batter and add topping. Transfer the brownie batter into the prepared baking dish and spread it evenly. Sprinkle the reserved chocolate chips evenly over the top.
- Bake brownies. Bake in the preheated oven for about 22 minutes. This timing yields a fudgy center and chewy edges. For even fudgier brownies, reduce the baking time slightly.
- Add flaky salt and cool. Once baked, sprinkle plenty of flaky salt over the top. Allow the brownies to cool completely in the pan to set and develop flavor.
- Refrigerate and slice. For best taste and texture, refrigerate the cooled brownies for at least one hour before slicing. They are especially delicious when served cold, and their flavor improves the next day.
