Ingredients
Chocolate Layer
- 1 cup dark chocolate
- 1 tbsp coconut oil
- 2 tbsp peanut butter
- 3 tbsp quinoa crisps
Peanut Butter Filling
- 1/3 cup peanut butter
- 1 tbsp maple syrup
- 1 tbsp coconut flour
Instructions
- Prepare the Chocolate Layer: Add dark chocolate and coconut oil to a medium bowl and microwave in 30-second increments, stirring well after each, until the chocolate is smooth and creamy.
- Mix Chocolate and Quinoa: Stir in 2 tbsp of peanut butter and 3 tbsp of quinoa crisps into the melted chocolate mixture and set aside.
- Make Peanut Butter Filling: In a small bowl, combine peanut butter and maple syrup, then gently fold in coconut flour until the mixture thickens.
- Assemble Peanut Butter Cups: Spoon about 1/2 tbsp of the chocolate mixture into silicon cupcake liners to create a base. Roll 1 tsp of the peanut butter filling into a ball, flatten slightly, and place in the center of the chocolate base without touching the sides.
- Top and Chill: Cover the peanut butter filling with more chocolate mixture. Place the filled liners in the freezer until the cups are fully firm.
- Serve: Once set, remove the peanut butter cups from the silicone liners and enjoy your crunchy, creamy treat!
Notes
- Use silicone liners to easily remove the cups once set.
- Microwave the chocolate mixture carefully in increments to avoid burning.
- Store peanut butter cups in the freezer or refrigerator for best texture.
- Quinoa crisps add a crunchy texture but can be substituted with puffed rice if desired.
- Adjust sweetness by varying the amount of maple syrup to taste.
