Ingredients

Chocolate Layer

  • 1 cup dark chocolate
  • 1 tbsp coconut oil
  • 2 tbsp peanut butter
  • 3 tbsp quinoa crisps

Peanut Butter Filling

  • 1/3 cup peanut butter
  • 1 tbsp maple syrup
  • 1 tbsp coconut flour


Instructions

  1. Prepare the Chocolate Layer: Add dark chocolate and coconut oil to a medium bowl and microwave in 30-second increments, stirring well after each, until the chocolate is smooth and creamy.
  2. Mix Chocolate and Quinoa: Stir in 2 tbsp of peanut butter and 3 tbsp of quinoa crisps into the melted chocolate mixture and set aside.
  3. Make Peanut Butter Filling: In a small bowl, combine peanut butter and maple syrup, then gently fold in coconut flour until the mixture thickens.
  4. Assemble Peanut Butter Cups: Spoon about 1/2 tbsp of the chocolate mixture into silicon cupcake liners to create a base. Roll 1 tsp of the peanut butter filling into a ball, flatten slightly, and place in the center of the chocolate base without touching the sides.
  5. Top and Chill: Cover the peanut butter filling with more chocolate mixture. Place the filled liners in the freezer until the cups are fully firm.
  6. Serve: Once set, remove the peanut butter cups from the silicone liners and enjoy your crunchy, creamy treat!
