Description

These Pumpkin Spice Peanut Butter Cookie Dough Bites are a quick and healthy no-bake treat made with just five wholesome ingredients. Vegan-friendly, gluten-free, and freezer-friendly, they’re perfect for fall cravings or anytime snacking.


Ingredients

  • 2/3 cup all-natural creamy peanut butter (nothing added)
  • 1/4 cup raw honey or brown rice syrup
  • 2/3 cup oat flour
  • 1 tablespoon pumpkin pie spice
  • 2 tablespoons coconut flour
  • Flaked sea salt (optional, for topping)

Instructions

  1. Line a medium cookie sheet with parchment paper and set aside.
  2. In a medium bowl, stir together peanut butter and honey (or brown rice syrup) until smooth.
  3. Add oat flour and pumpkin pie spice, stirring until almost combined.
  4. Add coconut flour and mix until fully absorbed. Dough should be soft but hold its shape.
  5. Use a small cookie scoop to portion and shape dough into bites. Place them on the prepared baking sheet. You should get about 20 bites.
  6. Top each bite with a pinch of flaked sea salt, if using.
  7. Transfer to freezer and chill for 15 minutes to firm up.
  8. Store bites in the fridge for a softer texture or in the freezer for a firmer bite.

Notes

  • You can substitute peanut butter with almond or cashew butter. For thicker nut butters, add a little melted coconut oil to help with consistency.
  • Maple syrup may be used in place of honey or rice syrup, though results may vary slightly.
  • Homemade oat flour can be made by blending oats in a food processor until fine.
  • These bites are great for meal prep and make a perfect grab-and-go snack.
