These Pumpkin Spice Peanut Butter Cookie Dough Bites are a quick and healthy no-bake treat made with just five wholesome ingredients. Vegan-friendly, gluten-free, and freezer-friendly, they’re perfect for fall cravings or anytime snacking.
Ingredients
- 2/3 cup all-natural creamy peanut butter (nothing added)
- 1/4 cup raw honey or brown rice syrup
- 2/3 cup oat flour
- 1 tablespoon pumpkin pie spice
- 2 tablespoons coconut flour
- Flaked sea salt (optional, for topping)
Instructions
- Line a medium cookie sheet with parchment paper and set aside.
- In a medium bowl, stir together peanut butter and honey (or brown rice syrup) until smooth.
- Add oat flour and pumpkin pie spice, stirring until almost combined.
- Add coconut flour and mix until fully absorbed. Dough should be soft but hold its shape.
- Use a small cookie scoop to portion and shape dough into bites. Place them on the prepared baking sheet. You should get about 20 bites.
- Top each bite with a pinch of flaked sea salt, if using.
- Transfer to freezer and chill for 15 minutes to firm up.
- Store bites in the fridge for a softer texture or in the freezer for a firmer bite.
Notes
- You can substitute peanut butter with almond or cashew butter. For thicker nut butters, add a little melted coconut oil to help with consistency.
- Maple syrup may be used in place of honey or rice syrup, though results may vary slightly.
- Homemade oat flour can be made by blending oats in a food processor until fine.
