Ingredients
- 4 salmon fillets (about 2 lbs)
- Salt and pepper, to taste
- 1/4 cup honey
- 2 tablespoons Dijon mustard
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- 1 1/4 cups crushed pistachios
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Pat salmon fillets dry with a paper towel and season liberally with salt and pepper.
- In a small bowl, mix together honey, Dijon mustard, minced garlic, and lemon juice.
- Stir in crushed pistachios until well coated.
- Evenly spread the pistachio mixture on top of each salmon fillet, pressing down gently to adhere.
- Place salmon on the prepared baking sheet and bake for 15 minutes.
- For a golden crust, broil the salmon for an additional 2–3 minutes, watching closely to avoid burning.
- Remove from oven and let cool for 10 minutes before serving. Serve with rice and vegetables if desired.
