Description

This sweet and savory Pineapple Casserole combines juicy pineapple chunks and crushed pineapple with sharp cheddar cheese, a touch of honey, and a buttery cracker topping. It’s a Southern classic side dish perfect for holidays and potlucks.


Ingredients

  • 20 ounces pineapple chunks in 100% pineapple juice, drained (reserve 2 tablespoons juice for the topping)
  • 20 ounces crushed pineapple in 100% pineapple juice, drained
  • ¼ cup honey
  • ⅓ cup all-purpose flour
  • 6 ounces freshly grated sharp cheddar cheese (about 1½ cups), divided
  • For the Topping:
  • 6 tablespoons unsalted butter, melted
  • 20 buttery round crackers, crushed (about ¾ cup)
  • ¼ cup panko breadcrumbs or additional crushed crackers
  • 2 tablespoons reserved pineapple juice


Instructions

  1. Preheat oven to 350°F and place a rack in the center. Lightly coat a 9×9-inch baking dish with nonstick spray (an 8×10 dish or deep 9-inch pie plate also works).
  2. In a large mixing bowl, combine drained pineapple chunks, crushed pineapple, and honey. Stir gently. Reserve 2 tablespoons juice for topping.
  3. Sprinkle flour and two-thirds of the shredded cheese over the pineapple mixture. Stir until the flour is no longer visible and cheese is evenly distributed.
  4. Spoon the mixture into the prepared baking dish and sprinkle the remaining cheese over the top.
  5. In a separate bowl, mix melted butter, crushed crackers, panko breadcrumbs (or more crackers), and reserved pineapple juice until evenly moistened.
  6. Sprinkle the topping evenly over the casserole.
  7. Bake for 35 minutes, or until hot, bubbly, and golden brown on top. Serve warm.

Notes

  • Make Ahead: Crush crackers up to 1 week in advance and store in an airtight container. Prepare casserole filling up to 1 day in advance and refrigerate, then top and bake before serving.
  • To Store: Keep leftovers in an airtight container in the refrigerator for up to 4 days.
  • To Reheat: Warm in the oven at 350°F or microwave until heated through.
  • To Freeze: Freeze for up to 3 months. Thaw in the fridge overnight before reheating. Texture may change slightly after freezing.
