This sweet and savory Pineapple Casserole combines juicy pineapple chunks and crushed pineapple with sharp cheddar cheese, a touch of honey, and a buttery cracker topping. It’s a Southern classic side dish perfect for holidays and potlucks.
Ingredients
- 20 ounces pineapple chunks in 100% pineapple juice, drained (reserve 2 tablespoons juice for the topping)
- 20 ounces crushed pineapple in 100% pineapple juice, drained
- ¼ cup honey
- ⅓ cup all-purpose flour
- 6 ounces freshly grated sharp cheddar cheese (about 1½ cups), divided
- For the Topping:
- 6 tablespoons unsalted butter, melted
- 20 buttery round crackers, crushed (about ¾ cup)
- ¼ cup panko breadcrumbs or additional crushed crackers
- 2 tablespoons reserved pineapple juice
Instructions
- Preheat oven to 350°F and place a rack in the center. Lightly coat a 9×9-inch baking dish with nonstick spray (an 8×10 dish or deep 9-inch pie plate also works).
- In a large mixing bowl, combine drained pineapple chunks, crushed pineapple, and honey. Stir gently. Reserve 2 tablespoons juice for topping.
- Sprinkle flour and two-thirds of the shredded cheese over the pineapple mixture. Stir until the flour is no longer visible and cheese is evenly distributed.
- Spoon the mixture into the prepared baking dish and sprinkle the remaining cheese over the top.
- In a separate bowl, mix melted butter, crushed crackers, panko breadcrumbs (or more crackers), and reserved pineapple juice until evenly moistened.
- Sprinkle the topping evenly over the casserole.
- Bake for 35 minutes, or until hot, bubbly, and golden brown on top. Serve warm.
Notes
- Make Ahead: Crush crackers up to 1 week in advance and store in an airtight container. Prepare casserole filling up to 1 day in advance and refrigerate, then top and bake before serving.
- To Store: Keep leftovers in an airtight container in the refrigerator for up to 4 days.
- To Reheat: Warm in the oven at 350°F or microwave until heated through.
- To Freeze: Freeze for up to 3 months. Thaw in the fridge overnight before reheating. Texture may change slightly after freezing.
