Ingredients
Greek Yogurt Bark:
- 1 1/2 cups plain Greek yogurt
- 1/2 cup peanut butter
- 2 tbsp honey or maple syrup
- 1/2 cup semi-sweet chocolate chips, melted
Optional Toppings:
- 1 medium banana, sliced
- 2 tbsp graham cracker crumbs
- 2 tbsp chopped nuts
Instructions
- Prepare Baking Sheet: Line a baking sheet with parchment paper and set it aside to make spreading and freezing the yogurt mixture easier.
- Make Yogurt Mixture: In a mixing bowl, combine the plain Greek yogurt, peanut butter, and honey (or maple syrup). Stir well until all ingredients are fully incorporated and smooth.
- Spread Mixture: Evenly spread the blended yogurt mixture onto the prepared parchment-lined baking sheet, creating an even layer.
- Melt Chocolate: Place the semi-sweet chocolate chips into a microwave-safe bowl and melt in 30-second increments, stirring between each, until fully melted and smooth.
- Swirl Chocolate: Dollop the melted chocolate over the yogurt layer, then gently swirl it into the yogurt using a toothpick or skewer to create a marbled effect.
- Add Toppings: Sprinkle the optional toppings over the surface – sliced banana, graham cracker crumbs, and/or chopped nuts as desired.
- Freeze: Place the baking sheet in the freezer and freeze the yogurt bark for a minimum of 4 hours or until fully hardened.
- Serve: Once frozen, cut the bark into your preferred size pieces. Transfer pieces to a freezer-safe bag and store for up to 1 month. Enjoy chilled as a refreshing treat!
Notes
- Ensure the Greek yogurt is thick and strained for best texture.
- You can substitute honey with maple syrup for a vegan-friendly option.
- Add additional toppings like berries, coconut flakes, or seeds to vary flavors.
- Store the bark in an airtight container or freezer bag to prevent freezer burn.
- Allow the bark to sit at room temperature for a few minutes before eating if it’s too hard to bite.
