Description
A wholesome and comforting Peanut Butter Banana Baked Oatmeal recipe that combines creamy peanut butter, ripe banana, and warm spices into a hearty breakfast dish. This easy-to-make baked oatmeal is naturally sweetened with maple syrup, packed with rolled oats, and perfect for a nutritious start to your day. It can be made vegan by substituting the egg with ground flaxseed and remains delicious and satisfying as an energizing meal.
Ingredients
Wet Ingredients
- 1 large spotty banana (mashed)
- ½ cup creamy all-natural peanut butter (preferably runny)
- 3 tbsp real maple syrup (or honey)
- 1 ¾ cups unsweetened almond milk or oat milk
- 1 large egg (or 1 tbsp ground flaxseed mixed with 3 tbsp warm water for vegan option)
- 2 tsp vanilla paste
Dry Ingredients
- 2 cups old-fashioned rolled oats (200g)
- 1 tsp ground cinnamon
- 1 tsp baking powder
- ½ tsp salt
Instructions
- Preheat: Preheat your oven to 350°F (175°C). Lightly grease a 9-inch square baking dish with cooking spray or avocado oil to prevent sticking.
- Mix Wet Ingredients: In a large bowl, combine the mashed banana, peanut butter, maple syrup, almond or oat milk, egg (or the flaxseed mixture for a vegan alternative), and vanilla paste. Whisk everything together until the mixture is smooth and fully combined.
- Add Dry Ingredients: Stir in the rolled oats, ground cinnamon, baking powder, salt, and if using flaxseed instead of egg, add it here as well. Mix thoroughly so that all ingredients are evenly incorporated. If the batter seems too thick due to the peanut butter’s consistency, add a little more milk to loosen it to the desired texture.
- Pour: Pour the combined batter into the prepared baking dish, smoothing the top evenly with a spatula for even baking.
- Bake: Place the dish in the preheated oven and bake for 35 to 45 minutes. The baked oatmeal is done when the top is golden brown and the center is firm and set.
- Serve: Let the baked oatmeal cool for about 5 minutes before slicing. Optionally, drizzle with extra peanut butter and garnish with fresh banana slices for added flavor and presentation. Serve warm and enjoy!
Notes
- This recipe can easily be made vegan by substituting the egg with ground flaxseed mixed with warm water.
- If your peanut butter is thick, adjust the milk amount slightly to get a batter that is pourable but not too runny.
- Use ripe, spotty bananas for optimal sweetness and flavor.
- Store leftovers in an airtight container in the refrigerator for up to 4 days, and reheat before serving.
- Feel free to add toppings like chopped nuts, chocolate chips, or fresh berries to customize the baked oatmeal.
