Description

A creamy, dairy-free fruit ice cream made with a blend of peaches, strawberries, and coconut milk, naturally sweetened with maple syrup for a refreshing and healthy treat.

Ingredients

  • For the Ice Cream:
  • 4 cups frozen fruit (a mix of peaches, strawberries, and mango works great)
  • 1 (13.66 oz) can coconut milk (full-fat for a creamier texture)
  • 4 tablespoons maple syrup (or adjust to taste)
  • Optional:
  • 1 teaspoon vanilla extract (for added flavor depth)
  • Lemon zest or juice (to brighten the flavor)

Instructions

  1. Blend the Fruit Base: In a food processor, combine the frozen fruit, coconut milk, and maple syrup. Blend until the mixture becomes creamy and smooth. Optional: Add vanilla extract or lemon zest/juice at this stage for extra flavor.
  2. Freeze: Transfer the creamy mixture into a container and place it in the freezer. Allow it to freeze for about 1 hour until it firms up.
  3. Serve: Scoop the frozen fruit ice cream into bowls or cones and serve immediately for a refreshing treat.

Notes

  • Additional Sweeteners: If you like your ice cream a bit sweeter, you can add agave syrup, honey, or even stevia to taste.
  • Mix-Ins: For added texture, fold in some chopped nuts, shredded coconut, or chocolate chips before freezing.
  • Make It Creamier: For an even creamier texture, blend in a frozen banana or a small amount of yogurt along with the fruit.
  • Tropical Twist: Substitute the peaches and strawberries with pineapple and mango for a tropical fruit version.
