Ingredients
- 2 large sweet potatoes
- 1 tablespoon kosher sea salt
- 2 tablespoons extra virgin olive oil, ghee, or butter
Instructions
- Preheat oven to 425°F (220°C). Line one or two large baking sheets with parchment paper.
- Slice sweet potatoes into 1/3″ to 1/2″ thick rounds.
- Toss sweet potato rounds with olive oil directly on the baking sheet until evenly coated.
- Spread the rounds in a single layer, leaving space between each piece. Use two baking sheets if needed.
- Sprinkle with sea salt.
- Bake for 30 to 40 minutes, flipping once halfway through, until golden and tender.
- Serve warm, or store in an airtight container in the refrigerator for up to 3 days.
