Description

These Oven-Roasted Sweet Potato Rounds are a simple and versatile side dish, perfect for any meal or meal prep. Crispy on the outside and tender on the inside, they’re seasoned with sea salt and roasted to perfection. Customize with your favorite herbs or spices!


Ingredients

  • 2 large sweet potatoes
  • 1 tablespoon kosher sea salt
  • 2 tablespoons extra virgin olive oil, ghee, or butter

Instructions

  1. Preheat oven to 425°F (220°C). Line one or two large baking sheets with parchment paper.
  2. Slice sweet potatoes into 1/3″ to 1/2″ thick rounds.
  3. Toss sweet potato rounds with olive oil directly on the baking sheet until evenly coated.
  4. Spread the rounds in a single layer, leaving space between each piece. Use two baking sheets if needed.
  5. Sprinkle with sea salt.
  6. Bake for 30 to 40 minutes, flipping once halfway through, until golden and tender.
  7. Serve warm, or store in an airtight container in the refrigerator for up to 3 days.
