  • 1 tbsp honey

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.
  2. Prepare Carrots and Glaze: In a large mixing bowl, combine the peeled and diagonally sliced carrots with 1/4 cup olive oil, 1/4 cup honey, minced garlic, chopped parsley, salt, and pepper. Toss everything together well to ensure the carrots are evenly coated with the glaze and seasonings.
  3. Initial Bake: Spread the coated carrots evenly on the prepared baking sheet. Bake in the preheated oven for 30 minutes, stirring every 10 minutes to promote even roasting and caramelization.
  4. Add Extra Glaze and Continue Baking: After the first 30 minutes, drizzle the carrots with the additional 1 tablespoon of honey and 1 tablespoon of olive oil.
