Ingredients
Vegetables
- 3 lbs carrots, peeled and sliced on a diagonal
Glaze and Seasoning
- 1/4 cup olive oil
- 1/4 cup honey
- 3 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tsp salt
- 1/2 tsp pepper
Additional Glaze for Tossing
- 1 tbsp honey
- 1 tbsp olive oil
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.
- Prepare Carrots and Glaze: In a large mixing bowl, combine the peeled and diagonally sliced carrots with 1/4 cup olive oil, 1/4 cup honey, minced garlic, chopped parsley, salt, and pepper. Toss everything together well to ensure the carrots are evenly coated with the glaze and seasonings.
- Initial Bake: Spread the coated carrots evenly on the prepared baking sheet. Bake in the preheated oven for 30 minutes, stirring every 10 minutes to promote even roasting and caramelization.
- Add Extra Glaze and Continue Baking: After the first 30 minutes, drizzle the carrots with the additional 1 tablespoon of honey and 1 tablespoon of olive oil. Toss gently to coat and return to the oven. Bake for an additional 8 to 10 minutes until the carrots are tender and beautifully caramelized.
- Garnish and Serve: Once roasted, top the carrots with a sprinkle of fresh parsley before serving to enhance flavor and add a fresh touch.
Notes
- For extra flavor, you can add a pinch of smoked paprika or cumin to the glaze before roasting.
- Make sure to stir the carrots during baking to avoid burning and ensure even cooking.
- This recipe works well with baby carrots as a convenient alternative.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently.
