Description

Oven-Roasted Cabbage Wedges with Caper Raisin Relish is a delicious and simple vegetable dish featuring tender, caramelized cabbage wedges roasted to perfection and topped with a tangy, sweet, and slightly spicy relish made from golden raisins, capers, and fresh herbs. This flavorful and healthy recipe is perfect as a side dish or light main, delivering a combination of textures and bold tastes with minimal effort.


Ingredients

For the Roasted Cabbage:

  • 1 small cabbage (about 1200 grams), cut into 6 wedges
  • 3 tablespoons olive oil
  • Sea salt and ground black pepper, to taste

For the Caper Raisin Relish:

  • ¼ cup golden raisins
  • 3 tablespoons capers
  • 1 tablespoon lemon juice
  • 1 tablespoon sherry vinegar
  • 3 tablespoons olive oil
  • ¼ teaspoon ground chilies
  • 1 small clove garlic, finely minced with a Microplane
  • ½ teaspoon vegan Worcestershire sauce
  • 3 tablespoons chopped flat leaf parsley
  • Sea salt and ground black pepper, to taste

For Garnish:

  • Chopped toasted almonds
  • Extra parsley (optional)


Instructions

  1. Preheat Oven: Preheat your oven to 450°F (232°C). Place a baking sheet in the oven to get it hot while you prepare the cabbage wedges.
  2. Prepare Cabbage Wedges: Brush the cabbage wedges all over with 3 tablespoons olive oil and generously season with sea salt and black pepper. Rub the oil and seasoning into the cabbage with your hands to ensure even coverage.
  3. Roast Cabbage: Carefully remove the hot baking sheet from the oven and place the cabbage wedges cut side down on it. You should hear a sizzle. Slide the baking sheet into the oven and roast for 25 to 28 minutes, flipping the wedges halfway through roasting to get even browning. The cabbage is done when it is tender and well-browned. Optionally, broil briefly at the end for extra caramelization.
  4. Prepare Raisins: While the cabbage roasts, place the golden raisins in a small bowl and cover them with hot water. Soak for 5 to 10 minutes, then drain thoroughly.
  5. Make Caper Raisin Relish: In a medium bowl, combine the drained raisins, capers, lemon juice, sherry vinegar, 3 tablespoons olive oil, ground chilies, minced garlic, vegan Worcestershire sauce, chopped parsley, and salt and pepper to taste. Stir well to combine all the flavors.
  6. Serve: Transfer the roasted cabbage wedges to a serving platter. Spoon the caper raisin relish generously over the cabbage. Sprinkle with chopped toasted almonds and extra parsley if desired. Serve warm.

Notes

  • Use a Microplane grater or very finely mince the garlic to evenly distribute its flavor in the relish.
  • Broiling the cabbage for 2-3 minutes at the end helps achieve extra caramelization but watch carefully to prevent burning.
  • The relish can be made ahead of time and refrigerated; bring to room temperature before serving for best flavor.
  • Adjust ground chilies quantity to control the spice level of the relish.
  • To toast almonds, lightly heat them in a dry skillet over medium heat until fragrant and golden, about 3-5 minutes.
