Description

A creamy, comforting one-pot dish featuring tender orzo, juicy diced chicken, sun-dried tomatoes, spinach, and Parmesan cheese, all baked together in a rich, flavorful sauce.


Ingredients

  • For the Dish:
  • 2 cups dried orzo
  • 3 ½ cups chicken stock
  • 1 cup heavy cream
  • 3 cups cooked chicken, diced
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • ¼ tsp red pepper flakes
  • 3 cloves garlic, minced
  • 1 (4 oz) jar sun-dried tomatoes (with oil), diced
  • 3 cups fresh spinach, chopped
  • 1 cup Parmesan cheese, shredded
  • Salt and pepper to taste
  • For Garnish:
  • Fresh basil or parsley

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Combine Ingredients: In a baking dish, add the orzo, chicken stock, heavy cream, diced chicken, garlic powder, Italian seasoning, red pepper flakes, minced garlic, sun-dried tomatoes, and spinach. Stir to ensure the orzo is completely covered by the liquid.
  3. Bake: Cover the baking dish with foil and bake for 30-35 minutes or until most of the liquid is absorbed and the orzo is tender.
  4. Finish the Dish: Remove from the oven, and fold in the Parmesan cheese. Add salt and pepper to taste, and garnish with fresh basil or parsley.
