Ingredients
- 1 teaspoon vegetable oil
- 1/2 pound (8 ounces) ground beef
- 1/2 cup chopped onion
- 1 garlic clove, minced
- 2 tablespoons tomato paste
- 1 (14.5 ounce) can diced tomatoes with juices
- 2–3 cups chicken stock or broth
- 1 teaspoon dried oregano
- 1 teaspoon salt (preferably kosher)
- 1/2 teaspoon ground black pepper
- 4 uncooked lasagna noodles, broken into bite-sized pieces
- 1/2 cup shredded mozzarella cheese
- 1/4 cup shredded Parmesan cheese
- 1 tablespoon chopped fresh basil
- 1 teaspoon granulated sugar (optional)
- 1/4 cup full-fat ricotta cheese
Instructions
- Heat the oil in a Dutch oven or large pot over medium heat.
- Add the ground beef, onion, and a few pinches of salt. Cook until beef is no longer pink, breaking it apart with a wooden spoon. Drain excess grease if needed.
- Add minced garlic and cook for 1 minute until fragrant.
- Stir in tomato paste, diced tomatoes with juices, 2 cups of chicken broth, oregano, salt, and pepper. Bring to a boil.
- Once boiling, add the broken lasagna noodles. Cook for 10–12 minutes, stirring occasionally, until noodles are al dente. Add up to 1 cup more broth if the soup gets too thick.
- Stir in mozzarella, Parmesan, and chopped basil until melted and well combined. Taste and adjust seasoning. Add sugar if the soup is too acidic.
- Serve hot, topping each bowl with 1 tablespoon ricotta cheese.
Notes
- You can substitute ground beef with ground turkey.
- Use regular or oven-ready lasagna noodles—just monitor cook time for doneness.
- Adjust the consistency of the soup by adding more broth as needed.
- Add a pinch of red pepper flakes for a spicy kick.
- Leftovers can be stored in the fridge for up to 3 days and reheated on the stove or microwave.
