Description

This One Pan Chicken Parmesan is a simple, flavorful dish with tender chicken breasts, pasta, and a rich marinara sauce, topped with melted mozzarella and parmesan. It’s a perfect dinner that’s both easy and delicious!


Ingredients

  • Chicken:
  • 1 tbsp butter
  • 2 tbsp Italian seasoned breadcrumbs
  • 2 tbsp olive oil
  • 4 medium chicken breasts, pounded to even thickness
  • 1 tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp salt
  • Pasta:
  • 1 tbsp olive oil
  • ½ cup diced onion
  • 1 tsp minced garlic
  • 2 cups uncooked rotini pasta
  • 24 oz pasta sauce
  • 1 cup water
  • 1½ cups shredded mozzarella cheese
  • ½ cup shredded parmesan cheese
  • 1 tbsp chopped parsley

Instructions

  1. Toast Breadcrumbs: Melt butter in a large skillet over medium heat. Add breadcrumbs and toast until golden. Remove and set aside.
  2. Sear Chicken: Wipe out skillet. Heat 2 tbsp olive oil over medium-high heat. Season chicken with Italian seasoning, garlic powder, and salt. Sear chicken 2–3 minutes per side. Remove and set aside (it won’t be fully cooked yet).
  3. Start Pasta Base: In the same skillet, heat 1 tbsp olive oil. Sauté onion and garlic until soft (about 3 minutes). Add uncooked pasta, pasta sauce, and water. Stir and bring to a boil.
  4. Cook Chicken and Pasta Together: Nestle chicken on top of pasta. Reduce heat to medium-low, cover, and cook 15–18 minutes until pasta is tender and chicken is cooked through.
  5. Melt Cheese: Uncover and stir the pasta gently. Top chicken with mozzarella and parmesan. Cover to melt, or broil uncovered for 1–2 minutes for a golden finish.
  6. Finish & Serve: Sprinkle toasted breadcrumbs and parsley over the top. Serve hot and enjoy!

Notes

  • For extra flavor, top with extra basil or a drizzle of olive oil before serving.
  • You can also use penne or rigatoni in place of rotini for this dish.
  • If you prefer a crispy chicken crust, broil the chicken for 1–2 minutes before serving.
