Ingredients
- For the Herb Butter:
- ½ cup unsalted butter, softened
- 2 teaspoons fresh parsley, chopped
- 2 cloves garlic, minced
- ½ teaspoon lemon zest
- ½ teaspoon salt
- For the Salmon:
- 4 (6-ounce) salmon filets
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 2–3 tablespoons Italian seasoning
- Fresh parsley, chopped (for garnish)
- Lemon slices (for serving)
Instructions
- Make Herb Butter: In a small bowl, combine softened butter, parsley, garlic, lemon zest, and salt. Mix well. Roll into a log using plastic wrap, twist the ends, and freeze for 3–5 minutes until firm.
- Season Salmon: Pat salmon filets dry with paper towels. Season evenly with kosher salt and Italian seasoning.
- Sear Salmon: Heat a cast iron skillet over medium-high heat. Add olive oil. Place salmon filets flesh-side down and cook for 3–4 minutes until golden.
- Finish Cooking: Flip the salmon, top each filet with a slice of herb butter, and cook for an additional 2–3 minutes or until internal temperature reaches 130°F.
- Serve: Top with extra herb butter, chopped parsley, and fresh lemon slices. Serve hot.
