Description

Ingredients

  • For the Herb Butter:
  • ½ cup unsalted butter, softened
  • 2 teaspoons fresh parsley, chopped
  • 2 cloves garlic, minced
  • ½ teaspoon lemon zest
  • ½ teaspoon salt
  • For the Salmon:
  • 4 (6-ounce) salmon filets
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 23 tablespoons Italian seasoning
  • Fresh parsley, chopped (for garnish)
  • Lemon slices (for serving)

Instructions

  1. Make Herb Butter: In a small bowl, combine softened butter, parsley, garlic, lemon zest, and salt. Mix well. Roll into a log using plastic wrap, twist the ends, and freeze for 3–5 minutes until firm.
  2. Season Salmon: Pat salmon filets dry with paper towels. Season evenly with kosher salt and Italian seasoning.
  3. Sear Salmon: Heat a cast iron skillet over medium-high heat. Add olive oil. Place salmon filets flesh-side down and cook for 3–4 minutes until golden.
  4. Finish Cooking: Flip the salmon, top each filet with a slice of herb butter, and cook for an additional 2–3 minutes or until internal temperature reaches 130°F.
  5. Serve: Top with extra herb butter, chopped parsley, and fresh lemon slices. Serve hot.
