Ingredients
Main Ingredients
- 10 ounces rice noodles
- 1 pound ground beef (80/20)
- 1 teaspoon fresh ginger, finely minced
- 4 garlic cloves, finely minced
Sauce Ingredients
- ½ cup low-sodium soy sauce
- 2 tablespoons dark soy sauce
- ½ cup water
- ¼ cup brown sugar
- 3 tablespoons cornstarch
Garnish
- Green onions, sliced
- White sesame seeds
Instructions
- Prepare the Sauce: Whisk together low-sodium soy sauce, dark soy sauce, water, brown sugar, and cornstarch in a bowl until smooth, then set aside.
- Cook the Rice Noodles: Prepare the rice noodles according to the package instructions, drain them well, and set aside.
- Cook the Ground Beef: Heat a small amount of cooking oil in a large wok or skillet over medium-high heat. Add the ground beef and break it into smaller pieces with a wooden spoon or spatula. Cook until there is nearly no pink left, about 5-7 minutes.
- Add Aromatics: Stir in the minced fresh ginger and garlic, cooking for 2-3 minutes until fragrant but not burnt.
- Simmer the Sauce: Pour the prepared sauce over the ground beef mixture and allow it to gently simmer, stirring occasionally, until the sauce thickens, about 3-4 minutes.
- Toss Noodles with Sauce and Beef: Add the cooked rice noodles to the skillet, tossing everything together to fully coat the noodles in the thickened sauce and mix evenly with the beef and aromatics.
- Garnish and Serve: Plate the noodles and garnish with sliced green onions and white sesame seeds for added flavor and texture. Serve immediately.
Notes
- Use 80/20 ground beef to ensure a good balance of flavor and fat for the sauce.
- Rice noodles should be cooked al dente, so they don’t become mushy when tossed with the sauce.
- Adjust the sweetness by varying the amount of brown sugar to taste.
- Dark soy sauce adds a richer color and deeper flavor; however, low-sodium options help control salt content.
- For a spicier version, add red pepper flakes or a dash of chili oil during cooking.
