Description

Mediterranean Quesadillas are a quick and healthy meal option featuring flour tortillas filled with a delightful mixture of feta and mozzarella cheeses, spinach, red onion, and tomatoes. Ready in just 15 minutes, this dish combines fresh Mediterranean flavors in a wholesome and satisfying quesadilla perfect for lunch or a busy weeknight dinner.

Ingredients

Vegetables

  • 1 diced tomato (grape/cherry tomatoes recommended for sweetness)
  • ⅓ cup diced red onion
  • 1 cup chopped spinach

Cheeses

  • ½ cup feta cheese
  • 1 cup shredded mozzarella cheese

Others

  • 3 burrito style tortillas
  • Small amount of oil for cooking

Instructions

  1. Prepare the Filling: Combine the diced tomato, diced red onion, chopped spinach, feta cheese, and shredded mozzarella cheese in a bowl, mixing well to create a flavorful filling.
  2. Assemble the Quesadillas: Place approximately one-third of the filling mixture on one half of each tortilla, then fold the tortilla over to cover the filling.
  3. Cook the Quesadillas: Heat a small amount of oil in a large flat pan or on a griddle over medium heat. Place the folded tortillas in the pan and cook for about 3 to 4 minutes per side, pressing gently with a spatula. Cook until the tortillas are lightly browned and the cheese inside has melted.
  4. Serve: Remove the cooked quesadillas from the pan, cut each into four slices, and serve warm. They pair wonderfully with toppings such as sour cream, salsa, or pico de gallo for added flavor.

Notes

  • Grape or cherry tomatoes are preferred for their natural sweetness, but plum tomatoes can be used as an alternative.
  • Pressing down gently while cooking helps the quesadilla crisp up evenly and melt the cheese thoroughly.
  • Customize with toppings like guacamole, sour cream, or fresh salsa to enhance the dish.
  • Use burrito-style tortillas for better folding and containment of the filling.
  • To make this vegetarian, ensure the cheeses used are suitable for vegetarians.
