Description

This Mayo Parmesan Chicken is incredibly juicy and tender thanks to a creamy mayonnaise and Parmesan coating. Baked to perfection with a crispy top and flavorful seasoning, it’s a quick and easy dinner that doesn’t taste like mayo!


Ingredients

  • 4 boneless, skinless chicken breasts (about pounds)
  • 1 teaspoon smoked paprika
  • 1 teaspoon cracked pepper
  • ½ teaspoon salt
  • ½ cup mayonnaise
  • 1 cup shredded Parmesan cheese, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Fresh parsley, for garnish

Instructions

  1. Preheat oven to 425°F (220°C) and lightly spray a 9×13-inch baking dish with nonstick spray.
  2. Season both sides of the chicken breasts with paprika, salt, and pepper. Place them in a single layer in the prepared dish.
  3. In a small bowl, combine mayonnaise, ½ cup of Parmesan cheese, garlic powder, and onion powder. Mix until smooth.
  4. Spread the mayo mixture evenly over each chicken breast.
  5. Sprinkle the remaining ½ cup of Parmesan on top of the coated chicken breasts.
  6. Bake uncovered for 25 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
  7. Garnish with freshly chopped parsley and serve hot.

Notes

  • The added layer of Parmesan on top creates a delicious, lightly crispy crust.
