This Mayo Parmesan Chicken is incredibly juicy and tender thanks to a creamy mayonnaise and Parmesan coating. Baked to perfection with a crispy top and flavorful seasoning, it’s a quick and easy dinner that doesn’t taste like mayo!
Ingredients
- 4 boneless, skinless chicken breasts (about 1½ pounds)
- 1 teaspoon smoked paprika
- 1 teaspoon cracked pepper
- ½ teaspoon salt
- ½ cup mayonnaise
- 1 cup shredded Parmesan cheese, divided
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Fresh parsley, for garnish
Instructions
- Preheat oven to 425°F (220°C) and lightly spray a 9×13-inch baking dish with nonstick spray.
- Season both sides of the chicken breasts with paprika, salt, and pepper. Place them in a single layer in the prepared dish.
- In a small bowl, combine mayonnaise, ½ cup of Parmesan cheese, garlic powder, and onion powder. Mix until smooth.
- Spread the mayo mixture evenly over each chicken breast.
- Sprinkle the remaining ½ cup of Parmesan on top of the coated chicken breasts.
- Bake uncovered for 25 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
- Garnish with freshly chopped parsley and serve hot.
Notes
- The added layer of Parmesan on top creates a delicious, lightly crispy crust.
