Description
Loaded BBQ Chicken Nachos are the ultimate easy dinner or game day appetizer! Topped with shredded BBQ chicken, black beans, corn, tomatoes, jalapeño, and melty cheese on crispy tortilla chips—these nachos are fully loaded and full of flavor!
Ingredients
- 2½ cups cooked shredded chicken (about 2 chicken breasts)
- ¾ cup BBQ sauce (e.g., Sweet Baby Ray’s)
- 13 oz tortilla chips
- 2 Roma tomatoes, diced small
- 15 oz black beans, drained and rinsed
- 1 cup frozen corn, thawed
- ⅓ cup finely chopped red onion
- 1 jalapeño, seeds removed and diced (add more to taste)
- 2½ cups shredded Mexican-style cheese
Instructions
- Preheat oven to 350ºF. Line a rimmed baking sheet with aluminum foil and spray with cooking spray.
- In a medium bowl, toss the shredded chicken with BBQ sauce until fully coated.
- Spread ⅔ of the tortilla chips onto the prepared sheet in an even layer.
- Top chips with ⅔ of the BBQ chicken, followed by ⅔ of the diced tomatoes, black beans, corn, red onion, and jalapeños.
- Sprinkle 1½ cups of the shredded cheese evenly over the nachos.
- Add the remaining tortilla chips on top, then layer with remaining BBQ chicken, vegetables, and top with the remaining 1 cup of cheese and extra jalapeños, if desired.
- Bake for 7–10 minutes, or until the cheese is fully melted and bubbly.
- Serve immediately while hot and gooey.
