Ingredients

  • 2 pounds potatoes
  • ¼ cup sliced Kalamata olives, pitted
  • ¼ cup sliced green olives, pitted
  • ½ red onion, sliced
  • ¼ cup chopped parsley
  • ¼ cup crumbled feta
  • For the Dressing:
  • ½ cup olive oil
  • 2 cloves garlic, minced
  • 2 tsp oregano
  • 2 tsp thyme
  • ½ squeeze of lemon
  • 1 tbsp grated lemon zest

Instructions

  1. Cook the Potatoes: Slice the potatoes and onion. Add the potatoes to a large pot and cover them with water. Bring to a boil over medium-high heat, then reduce the heat and simmer on low for 15 minutes, or until the potatoes are fork-tender.
