Ingredients
- 2 pounds potatoes
- ¼ cup sliced Kalamata olives, pitted
- ¼ cup sliced green olives, pitted
- ½ red onion, sliced
- ¼ cup chopped parsley
- ¼ cup crumbled feta
- For the Dressing:
- ½ cup olive oil
- 2 cloves garlic, minced
- 2 tsp oregano
- 2 tsp thyme
- ½ squeeze of lemon
- 1 tbsp grated lemon zest
Instructions
- Cook the Potatoes: Slice the potatoes and onion. Add the potatoes to a large pot and cover them with water. Bring to a boil over medium-high heat, then reduce the heat and simmer on low for 15 minutes, or until the potatoes are fork-tender.
