- 2 cans (15oz.) chickpeas (garbanzo beans), drained and rinsed
- 1/4 cup tahini
- 1/4 – 1/2 cup lemon juice (about 2 – 4 large lemons)
- A large handful fresh baby kale or spinach
- Chopped fresh dill, to taste
- Mineral salt, to taste
- Fresh cracked pepper or lemon-pepper, to taste
Instructions
- Sauté Vegetables: Heat olive oil or water in a pot over medium heat. Add diced onion and carrots, sauté for 5 to 7 minutes until softened. Add minced garlic and cook for an additional 1 minute, stirring frequently to avoid burning.
- Add Broth and Cook Orzo: Pour in the vegetable broth or water and bring the mixture to a boil. Add the whole wheat orzo and rinsed chickpeas. Reduce heat to medium-low and simmer gently for 8 to 9 minutes, or until orzo is tender.
- Finish Soup with Tahini and Lemon: Remove pot from heat. Stir in tahini and start by adding 1/4 cup lemon juice, stirring well. Adjust lemon juice to taste, adding up to 1/2 cup for more brightness.
- Add Greens and Season: Stir in the fresh baby kale or spinach; the greens will wilt within a few minutes. Mix in chopped fresh dill according to your preference. Season the soup thoroughly with mineral salt and fresh cracked pepper or lemon-pepper to enhance the flavors.
